For the toast:

4 slices whole wheat bread

2-3 ripe avocados

4 eggs

sunflower or canola oil

salt, pepper, chilly flakes

parmesan cheese

lemon or lemon juice

a handful of cocktail tomatoes

For the juice:

4 apples - whatever kind you prefer

4 valensina oranges

3-4 carrots

Yummy avocados & a vitamin boost

Avocados are one of my favorite and have been for a long time - they are not only healthy but also pretty universal and go together with many different dishes. Here I want to show you one of my all time favorites for a late breakfast or maybe even lunch.

Instructions:

  1. Cut apples in quarters and take out the cores.
  2. Peel the oranges using a large knife - make sure no orange skin is left.
  3. Peel the carrots and cut into pieces.
  4. Juice everything in a juicer - if your juices already goes into cups use half and half of everything.
  5. Cut the avocados into thin slices and and layer them onto your bread.
  6. Season your avocados with salt and pepper and drizzle some lemon juice over them.

  1. Cut the tomatoes into quarters and season with salt and pepper.
  2. Heat the oil in a pan and make your eggs sunny side up.
  3. Season the eggs with salt and pepper while baking.
  4. Put your eggs gently on your avocado bread - be careful not to crack the egg yolk.
  5. Sprinkle your toast with chilly flakes and graded parmesan cheese.
  6. Dish the avocado toast together with the juice - maybe stirring it again.
  7. Enjoy!

You can spice up your bread with whatever other seasoning you like. How about adding some red pepper or flaxseed? You could also top it off with some cress or other sprouts. Be creative and just try what you like best!

If you want your toast extra good, you should actually toast it before and have everything ready to go so you can enjoy it while it's still warm. If you're up for an even more advanced level - why not bake a bread yourself? Then enjoy while it's still warm!
